Chocophiles will be familiar with hot new talent Paul Wayne Gregory's name- and the man who proclaims 'Indulgence is everything' will certainly indulge pupils signing up to one of his masterclasses. Gregory's creations are eclectic and inspiring- with Caribbean inspired combinations including passion fruit, coconut, and dark rum.
As indulgence is the theme, what could be better than a combination of chocolate & rum. Gregory uses passion and skill to deliver recipes which compliment some of the region’s best rums - the quality of which is attested to by none other than HRH Queen Elizabeth, who selected Paul Wayne Gregory's creations as the chocolates of choice for her 80th birthday.
Whilst Ian Burrell, the UK’s first rum brand ambassador knows just how to combine those all important island flavours. Classes take place at Ian Burrell’s restaurant ‘Cottons’ in Camden Town which boasts the largest collection of rums in London and the perfect venue for entering into the spirit of the Caribbean.
